Barley has long been considered a very densely nutritional grain, and this is no exception. Lightly pearled and bursting with flavor, these little golden kernels look like jewels. Enjoy as you would rice in pilaf, grain bowls, soups, in burritos, stuffing and more. Rinse in a colander and simmer for 20 minutes with 2 parts water and 1 part grain.

This barley is lovely in porridge -- it can be good to let 1 cup barley soak in some water first, then discard the water and mix with about 1 cup medium grain brown rice and cook in a slow cooker with about 4 cups of water, as needed, for 3 or 4 hours on low setting. (The porridge can also contain steel cut oats, whole buckwheat groats, and other grains.)
