Easy Weeknight: Beef Tacos

Tacos are an incredibly versatile meal. They can be easily adapted to suit your taste or whatever ingredients you have on hand. 


1lb ground beef
Salt & pepper, to taste
1 sachet taco seasoning
1/2 yellow onion, diced
handful of grated cheddar cheese
Cherry tomatoes, halved
Queso fresco
Fiesta Roja Kraut
8-10 corn tortillas 


Season your ground beef with the contents of the taco sachet.

Brown beef in a skillet over medium heat, breaking it up as it cooks. When the beef is cooked through, add the diced onion and allow it to soften.

Warm each corn tortilla on a skillet before filling; adding a little shredded cheddar to one side while it warms gives the cheese a chance to melt a little.

To build the tacos, layer tortillas with cheddar, ground beef and onions, cherry tomatoes, Fiesta Roja and crumbled queso.

Add any additional toppings that you would like (salsa, chopped cabbge or romaine, cilantro, skyr for that sour cream effect, more cheese) and enjoy.

Cooked black beans or tempeh make a great vegetarian alternative to beef here.
