Quick and delicious. Assemble your toppings while the fish cooks, and dinner is done!
Ingredients:
1 lb fish filets
1 t garlic powder
3 t Baja taco seasoning
1/2 t freshly ground black pepper or chipotle powder
2 T oil
Add oil to skillet and put onon medium high heat to warm.
Mix together the garlic powder, taco seasoning and pepper.
Coat both sides of the fish in the seasoning mixture.
When the oil is hot - not just shimmering, but HOT - place the fish in the pan and leave, undisturbed, for 3 minutes.
Carefully flip, then cook for 3 minutes on the other side. Add more oil if your pan starts to dry.
Warm each corn tortilla in another pan, then fill with your fish and favorite toppings: shredded cabbage, pickled red onions, Gratitude kraut, mesclun, chopped Little Guys, queso, Chef Shred, grilled frozen corn kernels, Chipotle Sauce, sour cream, etc.
