Cook up some turkey carnitas style for the best leftovers/taco night ever.
Ingredients:
2 lbs cooked leftover turkey, bones and brown meat encouraged
3 cups broth (or half broth half apple cider)
2 T cider vinegar
2 cloves garlic, smashed
1 onion, halved
2 T Baja taco seasoning
salt, to taste
Place all ingredients in a pot, cover, and bring to a boil.
Lower heat to a simmer and cook for at least an hour.
Once the turkey is falling off the bone, drain thoroughly.
Warm 4 T of rendered turkey fat or oil in a large skillet.
Shred the drained and slightly cooled turkey (save the bones for broth or discard) then add to the hot oil.
Let the turkey cook, undisturbed, for 4 - 5 minutes so that it browns nicely.
Stir gently and continue browning until you have a nicely caramelized pan of turkey.
Enjoy in soft corn tortillas with pickled onions, Gratitude kraut, thinly sliced radishes, corn, queso, shredded red cabbage, or whatever you like best on your tacos!
