Warm Spinach Dip

Quick and easy; perfect for any spread, or a low-effort & tasty lunch.

Ingredients:

1 T olive oil
8 oz spinach, chopped
1/4 cup onion, finely chopped

1/4 t garlic powder
salt & peperoncini, to taste
8 oz cream cheese

1/2 cup grated cheddar
1/2 cup grated Giguere or Gouda
handful of grated mozzarella or queso

Preheat oven to 400.

Warm the oil in a skillet until it glistens and then add the onion.

Once the onion has softened a little, add the spinach, season with salt, pepper and garlic powder, and cook down.

While the spinach is cooking, mix together the cream cheese (Champlain Valley Creamery's is soft enough to stir easily), grated cheddar and whatever other hard, salty cheese you are using.

Add the warm spinach to the cheese mixture, stir through, then transfer to a small oven proof dish. 

Sprinkle a little mozzarella, queso, or more cheddar on top, then pop in the oven for 10-15 minutes.

If you want the top extra brown, finish off under the broiler.

Serve with crackers, chips, slices of baguette or Red Hen toast.
