I made tons of my cousin’s delicious pesto recipe with this huge bag of great quality basil. Two weeks in a row! Now we have a freezer bag of pesto cubes that we can thaw and add to pasta all fall and winter. Yum!
For pesto, process in a food processor: 2 cups tightly-packed basil leaves (=this FtY bag); 3 garlic cloves coarsly minced; 1 tsp salt; 3 tbs pine nuts lightly toasted; 1/2 cup olive oil. You can freeze this mixture.
When ready to serve, add 1-3tbs butter or olive oil; 1/2 cup grated Parmesan cheese; 3 tbs grated Romano cheese (or more paremesan).
