Roasted sweet potatoes balance out the spice from zhug in this sheet pan wonder.
Ingredients:
4 boneless chicken breasts
2 lbs sweet potatoes, uniformly chopped into about 1" chunks
2 -3 shallots, sliced
1/2 cup zhug
4 T olive oil
1 t salt
Marinate chicken in 1/2 cup zhug, 1 T olive oil, 1/2 t salt, for at least one hour, or overnight.
When your're ready to cook, preheat oven to 425.
Toss the sweet potatoes and shallots with 2 T olive oil and 1/2 t salt.
Spread them on a sheet pan and roast in the oven for 20 minutes.
Remove pan from the oven, give the sweets a little stir, then place the marinated chicken breasts on top and return the pan to the oven for 15 - 20 minutes, until breasts are cooked through.
Let the breasts rest for 5 - 10 minutes before serving, over a bed of cooked grains and with more zhug.
