Beef Empanadas

Lean on DelSur's handy dough discs and 'nduja for some warming flavor, and supremely tasty empanadas can be on your table in no time.

Ingredients:

1lb ground beef
1/3 cup finely chopped onion
1 clove garlic, minced
1 t 'nduja
1/2 cup ugly sauceĀ 
salt & pepper, to taste
1/2 cup grated cheddar (optional)
1 egg, beaten
1 package empanada dough discs

Defrost the dough discs overnight in the fridge.

Preheat oven to 375 and prepare a large baking sheet.

Warm your skillet and add beef, onion and garlic; cook, stirring, until there is no raw beef and the onions have softened .

Clear a space in the meat mixture and put the 'nduja into it. Let it heat for a minute or two, then stir into the meat.

Add the ugly sauce, season, and let simmer for a few minutes.

When the beef mixture has thickened, turn off the heat and get ready to make your empanadas.

(Stir through some grated cheddar now if you want cheesy empanadas.)

Place 2 -3 T of beef mixture onto one half of an empanada disc.

Fold it over and press it closed with the tines of a fork; this 1st one should give you an idea of how much filling you can use in each empanada without being able to close it, or it being too skimpy.

When each empanada has been filled, brush the tops with the beaten egg.

Bake for 20 minutes, or until golden brown and there is bubbling at the seams.

Enjoy with some curtido on the side!
