The edible portion of broccoli is the flower harvested in it's premature state. The broccoli head is a tight cluster of immature flowers on a thick stalk, if allowed to grow through it's lifecycle each bud opens to a small yellow edible flower. A member of the cabbage family, this vegetable is subtly sweet when cooked.

Excellent! We like it steamed to crisp-tender and dipped in Goddess dressing.
