This is the first garlic of the season -- a single garlic stalk with an uncured bulb at the base. You can use most of the stalk of green garlic as you would scallions. This young garlic has a lighter, "greener" flavor than the bite of regular cured garlic.
This is garlic that is harvested in it's immature state before the bulb fully develops.
