Tofu Bacon

Easy peasy and so chewy and delicious!

Ingredients:

1 block firm or extra firm tofu
2 T olive oil
3 T shoyu
1 t maple syrup
1 t cider syrup
1/4 t paprika

Slice your block of tofu into thin strips (around 1/16th of an inch if you can).

Lie the strips on a clean towel, place another clean towel on top, then weigh down with something heavy like a cast iron pot.

Leave for 30 minutes.

Mix together the shoyu, syrups and paprika and set aside.

When the tofu has been pressed for 30 minutes, warm the olive oil in a skillet until it is shimmering and hot.

Fry each slice of tofu for about 4 -5 minutes, or until golden brown, on eash side.

Remove and drain on another towel until you have fried all of the tofu.

Lower the heat on your skillet, wipe out any excess oil, then return the tofu to the pan.

Pour some of the shoyu mixture over the tofu, then flip, and pour a little over the other side.

Continue to brown to your liking, then remove and repeat the process with the rest of the tofu.
