This beautiful squash has a firm, almost potato-like texture and sweet, nutty flavor, with notes of citrus and vanilla. It is a relatively new hybrid of kabocha and butternut squashes, and combines the best of both.
Store whole and uncut in a cool, dry and dark place.
Koginuts have the same thin skin as a butternut, so they are easy to prepare. Roast and enjoy in a grain bowl or stew, or savor by itself. Stores well for months.
