This beautiful squash has a firm, almost potato-like texture and sweet, nutty flavor, with notes of citrus and vanilla. It is a relatively new hybrid of kabocha and butternut squashes, and combines the best of both.
Store whole and uncut in a cool, dry and dark place.
Koginuts have the same thin skin as a butternut, so they are easy to prepare. Roast and enjoy in a grain bowl or stew, or savor by itself. Stores well for months.
We roasted this in cubes; it cooked quickly and was incredibly delicious—sweet and nutty and flavorful. Highly recommended.
Sweet, well balanced, rich and flavorful. it never makes it past the roasting pan. We eat it like candy with a spoon out of the pan. Really special .
