Alla Norma Tomato Sauce

David's "alla Norma" sauce is made with his own tomatoes and eggplant. Cooked overnight in small batches, it combines the rich depth of lots of fine extra virgin olive oil with the brightness of newly-harvested tomatoes and fresh basil. Ricotta is added just before the sauce is put into jars.

This sauce is delicious and thick with yummy tomato and eggplant. We've used it over the gluten free pastas as well as the sauce base for homemade pizzas...throw some amazing FTY veggies on top and its a perfect, quick meal:).

Ummm.... Ok so this sauce is delicious! This is a definite keeper on my weekly list! I used it on the gluten free beet fettucine and it was fabulous. I can picture this being used in lots of recipes, can't wait to test them out!
