If you have some cooked black beans on hand, you don't even need to turn on the oven for this wonderfully flavorful dish.
Cut the kernels from 6 ears of corn (raw is delicious, but they can be cooked), and add them to a bowl with:
1 cup cooked black beans
1/2 bunch finely chopped cilantro
1/2 bunch finely chopped mint
1 pint chopped cherry tomatoes
1 sliced scallion
1 T olive oil
2-3 T cider vinegar
1/2 a finely chopped jalapeno if you would like some heat
salt, to taste
