If you have some cooked black beans on hand, you don't even need to turn on the oven for this wonderfully flavorful dish.
Ingredients:
6 ears of raw corn (or grilled and cooled)
1 cup cooked black beans, or half a can.
1/2 bunch finely chopped cilantro
1/2 bunch finely chopped mint
1 pint chopped cherry tomatoes
1 sliced scallion
1 T olive oil
2-3 T cider vinegar
1 fresh jalapeno pepper, thinly sliced (optional)
salt and peperoncini or black pepper, to taste
Cut the kernels from the corn.
Mix together in a large bowl, test for seasoning.
