Traditionally made with cherries, a clafoutis is a wonderful and not-too-sweet way to enjoy our beautiful local berries.
Ingredients:
Preheat oven to 350, and butter a skillet or shallow baking dish.
Add eggs, ground almonds, flour, sugar, syrup, vaniila and milk to your blender jug, or to a container that fits your immersion wand and blend until you have a smooth batter.
Scatter 1/4 cup redcurrants and 1/2 cup blueberries in the bottom of your prepared skillet or dish.
Pour the batter over the berries. Sprinkle a pinch or 2 of maple sugar on the surface, then pop into the oven for 30-35 minutes, or until the middle has set.
It is traditional to serve clafoutis topped with powdered sugar, but a tiny drizzle of maple syrup makes this the perfect easy breakfast treat.
