BBQ Sauce

Home made, and no ketchup needed!
3 lbs chopped tomatoes, or 3 pints of Little guys
4 cloves garlic
2 cloves black garlic
3 T maple syrup
1 T cider syrup
1 T cider vinegar
2 T mustard
1 T white balsamic vinegar
1 T red miso

1 T hot sauce
1 t shoyu
Put the chopped tomatoes, garlic and black garlic in a roasting pan.
Broil under high heat for 10-15 minutes, or until you have a good char. Stir once or twice to make sure everything cooks evenly.
Once cooled, put the tomato mixture into you food processor or blender and add the syrups, vinegars, mustard, hot sauce, miso and shoyu and blend until smooth.
Decant to a saucepan and simmer on medium heat for 20 minutes, until thickened.
Test for seasoning and add more shoyu, salt or hot sauce if needed.
Smear on ribs, chicken, tofu, tempeh... or anything!
