This basic template makes whipping up a cobbler simple and quick.
Preheat oven to 350.
For the cobbler, mix:
1 cup flour
1 cup buttermilk (or 1 cup of milk with some yogurt stirred through)
2 T maple sugar
1 t baking powder
1/2 t baking soda
pinch of salt
If you want to make a stone fruit or apple cobbler, you will need to stew the fruit a little. Cut into slices, 3 cups' worth, and bring to a simmer in a saucepan with 1/4 cup maple syrup, then take off the heat.
If you have fresh or frozen berries, you can skip this step.
Warm 4 T butter in your skillet, and keep it on medium heat until it starts to brown, around 3 minutes.
Add your batter to the browned butter.
Scatter the stone fruit, apples, or 2 generous cups of fresh or frozen beries on top of the batter. If using the berries, drizzle a little maple syrup on top.
Sprinkle with a pinch of maple sugar and/or chopped nuts, bake for 45-50 minutes, or until golden brown.
Serve with vanilla ice cream.
