The Method: Skillet Cobbler

This basic template makes whipping up a cobbler simple and quick.

Preheat oven to 350.

For the cobbler, mix:

1 cup flour
1 cup buttermilk (or 1 cup of milk with some yogurt stirred through)
2 T maple or regular sugar, plus pisch for sprinkling
1 t baking powder
1/2 t baking soda
pinch of salt
3 cups of fruit (sliced apples or stone fruit, pitted cherries, berries)
3 T maple syrup
4 T butter
1/4 cup sliced almonds

 
If you want to make a stone fruit or apple cobbler, you will need to stew the fruit a little: cut into slices, and bring to a simmer in a saucepan with the maple syrup, then take off the heat. If you using fresh or frozen berries, you can skip this step.
 
Warm butter in your skillet, and keep it on medium heat until it starts to brown, around 3 minutes.
 
Mix  flour, buttermilk, sugar, baking powder, soda and salt, then pour over the browned butter.
 
Scatter the fruit on top of the batter (if you are using berries, drizzle the syrup over them now).
 
Sprinkle with a pinch of sugar and the almonds..
 
Bake for 45-50 minutes, or until golden brown, or cook on a covered grill for slightly less time (check frequently).
 
Serve with vanilla ice cream.
