Radicchio is such a nice addition to any salad. The old Vermonters joke that this use to be a simple vegetable before it was given a fancy Italian name. They know it as Red Chicory or Tansy. It is a bitter 'green' with a touch of spice. The leaves are actually a dark red-magenta with a white base and white veins. It grows in a head form similarly to cabbage with loosely wrapped leaves.
Store in a plastic bag in the refrigerator.
