Cider syrup brings out the best in this beautiful chicory salad.
Ingredients:
1 head of radicchio, thinly sliced
1 crisp apple, cut into matchsticks
1/2 cup maple pepitas
1/2 cup chevre
3 T cider syrup
2 T cider vinegar
3 T olive oil
1 small shallot, finely chopped
salt and pepper, to taste
Mix radicchio and apple together in a bowl.
In a mason jar, shake together the cider syrup, vinegar, oil and shallot.
Dress the radicchio and apple, season with salt and pepper, then toss together.
Crumble the chevre, then sprinkle that and the pepitas over the top.
