A bunch of 3-4 onions with their tops are best enjoyed fresh as they have not been cured for storage. When properly cured on the farm, yellow onions can last through the winter. These bunched yellow onions have not been cured, and so are best kept in the refrigerator until use. They have a lower water content than sweet, white onions making them slightly astringent and concentrated in flavor.
