German Maple Apple Cake

Sweetened with just maple syrup, this is a wonderful seasonal treat from zestfull.

Ingredients:

2/3 cup butter (room temperature)
3 eggs
1/2 cup & 1 tbsp maple syrup
3 1/2 cup flour
1 tsp baking powder
3 apples –  cut into small pieces
1 tsp & 1 tsp cinnamon 

Preheat oven to 350°.

Butter a 9" spring form pan and then lightly coat with flour.

Combine butter, eggs and 1/2 cup of maple syrup using either beaters or a whisk. The mixture should be foamy and a little clumpy.

Add flour, baking powder and 1 tsp cinnamon. Mix well using beaters or a wooden spoon.

Mix apple pieces with 1 tbsp maple syrup and 1 tsp cinnamon

Spread 2/3 of the dough into the prepared pan, place apples over dough evenly.

Spread the remaining 1/3 dough over apples – this is tricky and is best done using a spatula.

Bake for 35-40 minutes until golden brown and toothpick comes out clean.

Best served with fresh whipped cream.
