This is a thinly sliced flavorful steak, cut with the grain of the sirloin. Although less tender than a Delmonico or Strip, the cut is thin and only requires a quick cook time. It is delicious in sandwiches, or used in Fajitas. Marinate it in plenty of salt, wine and spice of your choice.

This great beef is derived from Devon cattle, which are known for their good growth on grass only diets and overall hardy nature and deep beef flavor. The herd is rotationally grazed on grass spring through autumn and fed farm-harvested hay during the winter season.
