Weybridge is a VT Certified Organic, lactic-set cheese with a delicate, bloomy rind. The white, edible mold rind imparts a subtle cave aroma and a mushroom character to the developing creamline beneath. The center is moist and airy with bright citrus notes and a savory 'toasted' finish.
Store in the refrigerator.
I found this batch of Cheese from Weybridge Organic overly salty and one dimensional. This could have been a fluke though, I would ask others that have received this cheese at different times of the year or simply from a different to review and let me know what you think.

To learn her craft, Patty studied at the Vermont Institute of Artisan Cheese followed by a dedicated period of development, where she and Roger were able to draw upon the expertise of Vermont's rich artisan cheese community.
Patty and Roger Scholten manage a herd of Dutch Belt cows in the rolling landscape of Weybridge, VT. Organic, high quality milk production and farmstead cheesemaking have helped the Scholtens survive a competitive milk market. Now they've stepped up their game even further with Certified Grass-Fed Organic status. This means their cows do not receive a grain ration to help balance their grass-based diet and must get a certain percentage of total feed through grazing during pasture season.
