This summer cheese is made from pure sheeps’ milk when the farm's pastures are abundant with wild herbs and grasses. The flavor is sweet, rich and earthy with hints of clover, mint, and thyme. It resembles the Spanish and French sheep milk cheeses of the Pyrenees.
Store in the refrigerator.
