Squash seeds are an often overlooked source of nutrition and flavor. High in protein and flavor, they contain vitamins E and A and beneficial carotenoids like lutein and zeaxanthin. When carefully roasted and pressed for their oils the result is a savory, nutty flavored culinary oil that complements a variety of foods from salads to soups and marinades.
Stony Brook works directly with New York farmers to source seeds directly following the fall harvest. With a commitment to local sourcing they aim to support local production and promote environmental and economic health in the Finger Lakes region. Over a decade after they started, Stony Brook Wholeheartedfoods is still the only company in the U.S. producing culinary oil from vegetable seed waste, and one of the only regional producers of culinary oils using 100% USA grown seeds.
I love this product; it's my go-to topping for summer produce & salads. A little bit of crunch on top. Great sprinkled on fall soups as well. In general, Stony Brook makes amazing quality products. I wish Farmers To You carried the maple coated pepitas as well. They are an addictive snack.
These are amazing - roasted and salted to perfection. A perfect little bag to keep in the car/backpack for snacktime which never gets messy. My 3 year old would consume 50% of her daily calories from these if I'd let her.
