Burnt Rock Farm Organic Sweet Potatoes
These Covington sweet potatoes have a rose-colored skin and bright orange interior. They bake up moist and creamy, with a malty sweetness. No need to peel, just chop and add them to stews, roast and toss into a burrito, or grate right onto a salad. Or just use it in place of pumpkin in a pie... so easy and versatile.

Another member tipped me to these this winter .. and they are now in our weekly order. Simply wrapped in foil, baked at 450 for 40 minutes or so. Add butter (yes!) and salt and pepper. EAT. Each one is not TOO big -- so easy to either eat by oneself .. or to share.
