This is a pair of radicchios: one treviso (elongated and purple, a sturdy variety for roasting and sauteeing) and one chioggia (mild, with a buttery, well blanched interior, suitable for use raw in salads). The old Vermonters joke that this use to be a simple vegetable before it was given a fancy Italian name. They know it as Chicory or Tansy.
