When properly cured on the farm, yellow onions can last through the winter. These bunched yellow onions have not been cured, and so are best enjoyed fresh and kept in the refrigerator until use. They have a lower water content than sweet, white onions making them slightly astringent and concentrated in flavor.
These onions are so sweet -- but with a definite onion flavor -- that even my kids are willing to eat them sliced thinly in a kale salad. I slice the onions and let them sit in some mayonnaise, then massage the leaves with lemon juice and olive oil until they wilt. Mix in the mayo and onion and then top with chickpeas.
