This is a find! As a Korean American, I was always sad that the western palate and cuisine tended to underestimate this lovely garlicky "not chive not scallion" treasure of a vegetable. I use it sometimes to throw in salads, but primarily to make a spring kimchi-like side dish. Once you have a chili, garlic, and fish sauce rub ready, you're good to go all within 15 minutes.
