Duck Eggs

Duck eggs are larger than chicken eggs and have rich, creamy yolks. They are nutrient dense and have less water weight than a chicken egg making them ideal for baking by creating a higher rise with more volume and stability.

Duck eggs are higher in omega-3 fatty acids, antioxidants, Vitamin A and protein than chicken eggs and are also considered to be an alkaline food. They are also a great source of vitamin D, selenium and contain all 8 B vitamins. In the summertime, the laying flock at Union Brook grazes in the pasture and is brought to fresh grass daily. During the wintertime, they are fed fresh hay and grain.

It was the first time I tried duck eggs. What a pleasant surprise! The listed description is on point. If readily available, I'd forfeit chicken eggs for sure. Thank you for making them available.
