The perfect partner for any number of dishes, or a star on its own. Using Wapsie cornmeal boosts the flavor AND the nutrients.
Ingredients:
1+ T butter, to grease the skillet
1 cup cornmeal
1 cup soft white flour
1 t salt
3 t baking powder
1 t baking soda
1 egg
1/3 cup maple syrup
1 cup buttermilk, or milk with 2 T yogurt mixed in
1/4 cup melted butter or bacon fat
Preheat oven to 425 degrees and pop your skillet into the oven with the tablespoon of butter, too warm.
Whisk dry ingredients together.
Whisk together buttermilk, syrup and egg.
Add the wet ingredients to the dry, then slowy mix in the melted butter or bacon fat.
Carefully remove your hot pan from the oven, then pour in the batter, spreading it out if need be.
Return to the oven and bake for 25 minutes until golden brown.
Add more butter to the top and serve with chili, soup, cooked greens, or maple syrup for a delicious breakfast.
