These are the wonderful thin skinned nearly seedless cukes that taste so much like a fresh spring breeze. Crisp and fresh and green!
Keep these in a bag in the fridge as their thin skin does not keep them from drying out like the later field cucumbers.
European cucumbers are sweet, crunchy and delicate. They have much smaller seeds and a thin skin which makes their flavor less bitter than the average slicing cuke.

Pretty spectacular to have fresh, large (the size of three pickling cukes) cucumbers coming out of Vermont in March. A real treat that hints at summer veggies to come. What a difference after eating root veggies and sprouts for a few months. Welcome spring!
