Pasteurized Cow Milk
This is a mild, soft ripened cheese akin to a delicately flavored brie. A thin rind encloses a soft, creamy center with clean flavors ranging from nutty to sweet and earthy when it is at peak ripeness.
If this cheese is more mild than what you like, let it sit in your fridge for a week or two allowing it to ripen and develop more complex flavors.
Store in the refrigerator.
This cheese is named for a small pond in Craftsbury, Vermont and is a Jasper Hill Cellars original.
Delicious! This just arrived and I’ve never tasted a US-made cheese that does such a good job of capturing that classic delicious Brie texture and flavor. Yum!!
