The leaves of savoy cabbage are tender and sweet, and more delicate in texture than red or green cabbage.
Store in the refrigerator.
I ordered what I thought would be a beautiful organic green savoy cabbage (something like this picture) and a nearly white cabbage arrived that doesn't look pretty at all and is now going to become a soup.
We love this cabbage. This weekend, we used it for a stew with toasted farro, originally from the Six Seasons cookbook and adapted by Smitten Kitchen. It was super delicious and our kids ate it up! https://smittenkitchen.com/2019/01/cozy-cabbage-and-farro-soup/
Vermont has the perfect climate for growing storage cabbage. Plenty of rain, long summer days, and an early frost that brings out the sweetness in the vegetable.
