This wonderful cold weather brassica is a variation of cabbage that grows numerous small heads along a tall stalk. Brussels sprouts are slightly bitter in flavor, which is mellowed with cooking and balanced by a sweet flavor brought on with the cool weather.

I roast these with some olive oil and salt all at once and re-heat left overs in a skillet. Just as delicious everytime I eat them!
