Gold beets are deep orange outside, beautiful bright yellow-gold inside, and are wonderfully sweet and tender.
Store beets in a plastic bag in the refrigerator.
We love these sweetest of all beets. I boil them, peel and slice. Put slices onto a bed of lettuce, add small pieces of soft goat cheese on each beet piece and then top with a dressing of good balsamic vinegar and olive oil. So tasty.
