Asparagus is such a welcome sign of spring!
My son loves asparagus. I've always thought it was ok, but WOW! I roasted these in the oven with olive oil and salt. They were amazing! They put the grocery store version to shame.
Hopefully they will be available again.
Growing asparagus in our cooler climate is an incredible challenge and takes great skill. It is also a real investment since it is a perennial crop that comes up again each spring.
