The Method: Nut Milk

Looking for something creamy to put in your cold brew? Home made nut milks are delicious and easy to make.

Start by soaking 1 cup of your chosen nut in a bowl of water over night.
When you're ready to make the nut milk, drain the nuts in a colander and put them into your blender. Add 4 cups of water and blend for a few minutes. If you wish to sweeten or flavor your milk at all, now is the time to add those ingredients. A little vanilla, cocoa powder, maple syrup or sugar perhaps.
Set up some cheesecloth or a nut milk bag over a mesh strainer and a large jug or jar.
Slowly pour your milk into the strainer. When the milk has mostly strained through, squeeze the last of the creamy liquid in the cloth until you are left with just the nut residue. This is great to add to smoothies or baked goods.
Fresh nut milk will last at least a week in your fridge.
If it settles, just give it a little shake before using.
