Puntarelle is a type of chicory, and like other chicories, it has a mild bitterness. This amazing Italian heirloom is familiar to anyone who has been to Rome or is interested in Italian cuisine.

The beautiful Puntarelle alla Romana salad features the curling stems (they are cut and then soaked in ice water to achieve this) tossed in a rich dressing of olive oil, vinegar, garlic and anchovies (or try miso for a vegetarian version).

Never tried it before and a *big fan* less bitter than the radicchio, actually. After following the instructions of using ice water, not bitter at all. I will say that both of the times I ordered this, it didn't really look like the photo-- I received a very large portion of what's termed "the heart" of puntarelle. I was unable to get the puntarelle to curl in ice water per the instructions -- I'm assuming I need more practice or would need to order the actual tool that was made for this exact task.
