Silas has let us know that THIS WEEK is the last week for ginger this year. It's been a great run - get some while you can, it freezes beautifully.

Store in a plastic bag in the refrigerator and use within a week, or freeze for later use.
Freezing tips:
Grate the ginger and pack into a plastic ziplock bag and press the ginger into a flat sheet before freezing. Break off a section of the frozen ginger sheet to use as needed. Or, grate the ginger and pack into ice cube trays. Freeze and use the conveniently portioned cubes as needed.
I don't think I can ever go back to grocery store ginger even if it means I can't cook with ginger certain seasons. This ginger is not at all tough or fibrous. The flavor is amazing.
