Pac choi is a crisp Asian green with a succulent, sweet flavor similar to cabbage. This week the babies have budded, and boast sweet, tender stalks. These are young and therefore quite tender and the translucent white stalks delightfully crisp.
Store in a plastic bag in the refrigerator.
When young, baby pac choi is so tender it is delicious raw. The larger heads are great steamed with lemon, in soups, or sauteed with a spicy ginger sauce as part of a stir fry. It can be used in place of napa cabbage in some dishes, but due to it's more tender nature please shorten cooking times.
