Pac choi is a crisp Asian green with a succulent, sweet flavor similar to cabbage. This week the babies have budded, and boast sweet, tender stalks. These are young and therefore quite tender and the translucent white stalks delightfully crisp.
It can be used in place of napa cabbage in some dishes, but due to it's more tender nature please shorten cooking times.
