Arugula, also known as rocket, is such a warming green - spicy and invigorating mixed into a salad, scattered on a pizza, or eaten alone.

Native to the Mediterranean, the leaves are mild and tender during the cool season. As the weather warms up the leaves take on a more peppery flavor, which adds a delightful accent to a meal. Here in Vermont our summers offer a range of temperatures, often fluctuating from 50 degrees in the evening to above 80 in the heat of the day. These temperature swings contribute to the depth of flavors throughout the season. Now cultivated worldwide, arugula also grows wild in mild climates such as California.
