This yellow globe or storage onion is perfect for any dish. It has a complex flavor, much more so than the summer white onion. These are being sourced from Juniper Hill, an organic farm in New York.
These onions should be stored in a cool, dry, dark place.
Over a few attempts to buy these, we kept having a 1/4 to a 1/3 of the onions we got be rotten (brown + smushy). Unfortunately not going to get these again. Loved the idea of buying local onions throughout the winter, but from what we got, the quality isn't quite there

Onions need to be kept weed free all season, then they are harvested on a dry day, taking care that the bulbs are not sunburned. They are then hung to dry, or stacked in wooden crates, with plenty of ventilation.
