Fiddlehead Tomme

This is a natural rind cheese, cave aged for over six months to create a semi-hard cheese, similar to Tomme de Savoie from the Haute-Savoie region on the Swiss border. This is Boggy Meadow's take on the classic boulangerie cheese, and it is mild, nutty and delicious.

Whole raw milk, cultures, enzyme, salt.
