Pistachios make a beautiful and very tasty pesto.
Ingredients:
2 cups packed arugula
extra virgin olive oil, to whatever consistency you like
⅓ cup shelled pistachios
1 clove garlic
salt and pepper, to taste
dash of cider vinegar or lemon juice
Process everything together, streaming in oil until you reach your desired consistency, and serve of grilled fish, chicken or pasta.
