A delicious dinner in under 10 minutes.
Ingredients:
2 T olive oil
3 cloves garlic, minced
salt & red pepper flakes, to taste
1/2 t dried oregano
1 pint Little Guys, roughly chopped
1/4 cup sour cream or cream cheese
1 package potato gnocchi
1/4 or more gnocchi cooking water
grated gouda, to top
Put a pot of water on to boil.
In another pan, warm some olive oil.
Add the garlic to the oil, season with salt, red pepper flakes and oregano.
When the garlic has warmed and become fragrant, added the chopped tomatoes
Cover the pan, and allow them to simmer and break down.
Cook the gnocchi according to the directions - they really only need to boil for a few minutes.
Once the tomatoes have released their juices, add the sour cream or cream cheese and the gnocchi cooking water. Coax the cream cheese into mixing with the water and tomatoes until you have a creamy sauce.
Add more of the gnocchi water if it's too thick.
Gently mix in the drained gnocchi.
Serve with grated gouda for an extra cheesy punch.
