This is an average triple cream. There is a sharp finish to the cheese and it lacks the complexity to balance that flavor.
I tried this cheese, and it was ok, but not a favorite. (I am not particularly educated about cheese, so take my comments as those of a person who enjoys cheese but knows little about it.) I'm guessing this cheese is too young for me? The texture was very nice, but the flavor was kind of bright and new, not mellow and... the way I want my cheese to taste. It wasn't hard for me to eat, but wasn't an indulgence either--just something to put on bread.
