Mt Alice is a Camembert type cheese that the von Trapps make from the organic milk of their mixed breed herd. This cheese is aged at the farm for three to five weeks depending on the time of year.
The von Trapp Farmstead was started 50 years ago when Erika von Trapp came to the US from Austria to settle in Waitsfield Vermont. Sebastian is her grandson and continues in the family tradition of farming and preserving the working landscapes of Vermont.
We like Mt. Alice a lot because it is so mild and doesn't have the sharpness that some bries have. Even my kids like it!

If I could, I would give this cheese a 4.5. It is a nice double cream that pairs well with sweet or savory foods.
I have three words to say about this cheese: yum yum yum.
We absolutely love this cheese. Once it warms to room temperature it's nice and soft and almost liquid. It was amazing paired with a rosemary cracker and a little bit of fig spread for an appetizer.
We're huge fans of camembert and this one doesn't disappoint. A bit of this and a baguette and you have a great appetizer.
