Chioggia Beets are a light red on the outside, and striped in a circular pattern of pink and white on the inside. Wonderfully sweet and tender. For the most brilliant effect, thinly slice into disks, semicircles or matchsticks, toss with some salt and lemon juice and add to a salad.
Store beets in a plastic bag in the refrigerator.
