Skillet pancakes are a great way to get pancakes on the table for a crowd, simultaneously, without all the standing around and flipping. Here, the kefir adds lift, and the oats help keep everyone feeling satisfied until lunch.
Ingredients:
I cup rolled oats
1 1/4 cup kefir or buttermilk
1/4 cup milk
3 T butter
2 T maple syrup
2 eggs
2/3 cup flour
2 t baking powder
1/4 t salt
1 cup fresh or frozen blueberries
Whisk together the kefir and milk and then add the oats.
Let soal for 10 minutes.
Preheat oven to 375
Add 1 T butter to your skillet and put it in the oven to warm.
Separately, melt another 2 T butter.
