Skillet Pancake With Oats & Kefir

Skillet pancakes are a great way to get pancakes on the table for a crowd, simultaneously, without all the standing around and flipping. Here, the kefir adds lift, and the oats help keep everyone feeling satisfied until lunch.

Ingredients:

I cup rolled oats
1 1/4 cup kefir or buttermilk
1/4 cup milk
3 T butter
2 T maple syrup
2 eggs
2/3 cup flour
2 t baking powder
1/4 t salt
1 cup fresh or frozen blueberries

Whisk together the kefir and milk and then add the oats.

Let soal for 10 minutes.

Preheat oven to 375

Add 1 T butter to your skillet and put it in the oven to warm.

Separately, melt another 2 T butter.

Whisk together to syrup and eggs, add the kefir and oat mixture, mix, then add the melted butter.
 
Add flour, baking powder and salt and fold until just mixed.
 
Gently stir in the berries, then pour into the hot skillet.
 
Bake for 20-30 minutes, and serve warm with maple syrup.
